Connie’s Corner
Born in Havana, Cuba in 1938, Connie has always been a health nut, and someone who loves to teach others about healthy lifestyles and holistic practices. She credits her zest for life and her love for all living things to her parents; who were very simple, but very hard-working people from Galicia, Spain. However, she credits her knowledge of this lifestyle to the late Dr. Annie Stephens, an Iridologist, who became her mentor after 20 years of following her teachings. When the last son came full-time into the business, she thought she would take advantage and provide a healthy lunch for the family to enjoy together. At first she would cook everything at home and take it to the shop; but after 5 years, she decided to take a piece of the warehouse and create her own kitchen inside the shop. The Kitchen (after a struggle with the family for taking an 8’x8’ chunk of the warehouse) was opened in 1994.
Connie cooks organic, ovo-lacto vegetarian lunches 4 days a week for the family, clients, and others who happen to drop-in at the right time. She has had hundreds of clients eat-in after being overtaken by the smell of her cooking during a meeting with one of her boys.
She does this to ensure that the people she cares most for: her family, friends and clients have a nutritious well-balanced meal on a daily basis.
